2017 Dry Sparkling Riesling - This is the perfect local substitute for Champagne to celebrate any occasion or to jazz up your holiday brunch. This fresh, dry sparkling Riesling has an exciting crisp grapefruit acidity, with notes of baked apple and spice, pear, chamomille, and carmelized green apple. Expect an initial snappy fizz (smaller bubbles than sparkling wines produced in the Méthode Traditionnelle) followed by a nutty, soft texture. Pair this sparkling wine with soft cheeses, creamy butternut squash soup, buttery seafood dishes, and sauteed winter vegetables.
2016 Nebullite Sparkling Red - Whether there is a new star forming or simply a family holiday, certainly a champagne glass filled with the swirling, fizzing cosmos of this red sparkling wine is intriguing and worthy of any celebration, large or small. Similar to our refreshing red, "Rubellite" blending Syrah and Grenache, we reserved some for the purpose of creating a bubbly offspring which we dubbed "Nebullite". Deep amethyst color and cherry, light herbal licorice aromas tickle the senses while bright flavors of cherry, strawberry and just a hint of powdery tannins and citrus tempt the palate. "Nebullite" has beautiful light fruit character and good acidity so it feels dry on the finish. Especially good with charcutrie but pairings can also be imaginitive -try oysters (especially smoked or cooked), pate, prosciutto, smoked cheese, lox, escargot, caviar, sausage, chocolate and pecan pie.
