2017 Sparkling Riesling
Who doesn't love sparkling wine?! This is the perfect local substitute for Champagne to celebrate any occasion or to jazz up your Sunday brunch.
This fresh, dry sparkling Riesling has an exciting crisp grapefruit acidity, with notes of baked apple and spice, pear, chamomille, and carmelized green apple. Expect an initial snappy fizz (smaller bubbles than sparkling wines produced in the Méthode Traditionnelle) followed by a nutty, soft texture.
Pair this sparkling wine with soft cheeses, creamy butternut squash soup, buttery seafood dishes, and sauteed summer vegetables.

**An ancient method of producing sparkling wine, in which the primary fermentation is stopped before completing, and a secondary fermentation occurs in the bottle, ending when the yeast cells deplete the supply of residual sugar. There is no dosage (addition of sugar), to kick-start the secondary fermentation, and the wine is not disgorged to remove any sediment or lees remaining afterward.
